BERRY ENOUGH CHEESECAKES
When it comes to desserts our family always says, "give me just a sliver". Next thing you know you have eaten so many "slivers" that you almost down a whole pie! So these little "berry enough" cheese¬ cakes are perfect size for "just a sliver".
CRUST
1½ cup walnuts
½ cup medjool dates, pitted & chopped
½ cup currants
¼ cup date sugar
1 cup shredded coconut
BASIC FILLING
3 cups raw cashews, soaked 1 hr
¾ cup lemon juice
¾ cup agave nectar
¾ cup coconut oil
1 teaspoon vanilla extract
For the crust: blend the walnuts, dates, currants and date sugar in a food processor. Add coconut and pulse a few more times. Lightly coat individual mini cheesecake molds with coconut oil and press approximately 1 tablespoon of nut mixture into each mold. Place in freezer until ready to fill.
For the filling: blend all ingredients in high-speed blender until smooth. Fill the individual molds and freeze.
For the topping: frost with strawberry, blackberry or raspberry glaze (page 75). Then add assorted berries for the final touches!
